There are references to Coriander and coriander seeds in Egyptian medical texts written on papyrus dated around 1550 BC. Coriander is a cooling agent according to Ayurveda. It helps cool the body. Coriander water (water in which coriander is soaked overnight) was used by our ancestors and is now a health fad again. It is supposed to aid in weight loss to helping fight acne and pigmentation.
The whole coriander plant is edible. The seed plays an import part in Indian cuisine. There are few dishes in India that have not been influenced or touched by the coriander seed or the coriander leaf.
